How to pick it so it keeps feeding you
Don't pull the whole plant. Take the outer leaves only, three or four at a time, and leave the small ones in the middle alone — that growing point is the whole factory. Done right, one sowing keeps cutting for weeks instead of giving you a single salad. Start picking as soon as leaves are hand-sized; waiting for a supermarket-looking head is how people end up with bitter leaves and a plant that bolts. The three ways this usually dies
